Infused with the energy and warmth of Mexico’s vibrant culture, THREE SIXTY transformed Paloma Taco and Tequila into a bold, inviting space that celebrates color, craft, and conviviality. Inspired by the dual meaning of its name, both the beloved tequila-based cocktail and the graceful bird, the design captures a spirited balance of liveliness and ease.
The interior bursts with texture and color, reflecting Mexico’s rich tradition of textiles and handcrafted artistry. Patterns in wallpaper, expressive murals, and layered materials selected by our team bring rhythm and vibrancy to every surface. Custom details, such as birdcage-inspired light fixtures and a bespoke “feathered” bar front, create playful focal points that nod to Paloma’s namesake with a wink of whimsy.
Within the restaurant’s compact footprint, thoughtful space planning was key for our team. The open kitchen and bar invite guests into the culinary process, emphasizing the owner’s food-centric vision and creating a sense of connection between diners and chefs. A custom THREE SIXTY plywood banquette grounds the space with casual warmth, while touches of reclaimed wood add authenticity and texture, ensuring the atmosphere feels both approachable and artfully composed.
The design complements Paloma’s modern interpretation of Mexican cuisine—creative, colorful, and full of life. Guests enjoy a dynamic menu of inventive dishes, signature cocktails, and a robust selection of tequila and mezcal, all served in a setting that feels as welcoming as it is vibrant.
With its blend of punchy color, handcrafted details, and joyful design gestures, Paloma is a true reflection of its namesake—spirited, expressive, and soaring with good vibes.
